Description

A quick and delicious dish of Thai Peanut Noodles that’s simple to prepare and packed with flavor.


Ingredients

  • 8 oz rice noodles
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp lime juice
  • 2 tbsp honey
  • 1 tsp garlic, minced
  • 1/2 tsp ginger, grated
  • 1/4 cup water
  • 1 cup bell peppers, sliced
  • 1/2 cup carrots, julienned
  • 1/4 cup green onions, chopped
  • 1/4 cup crushed peanuts for garnish


Instructions

  1. Cook the rice noodles according to package instructions.
  2. In a bowl, mix peanut butter, soy sauce, lime juice, honey, garlic, ginger, and water until smooth and creamy.
  3. Heat a pan over medium heat and stir-fry the sliced bell peppers and carrots for 5 minutes until tender but crisp.
  4. Add the cooked noodles and peanut sauce to the pan. Toss until noodles are well coated.
  5. Serve in bowls and sprinkle with green onions and crushed peanuts.

Ensure noodles are cooked al dente and avoid overcooking the vegetables for the best texture.
