A comforting and flavorful one-pot Thai Peanut Curry that comes together in approximately 30 minutes. Perfect for those who crave a delicious meal without spending hours in the kitchen.
Ingredients
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 lb chicken, cut into pieces (or tofu for vegetarian)
- 1 can (14 oz) coconut milk
- 3 tablespoons Thai red curry paste
- 3 tablespoons peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Steamed rice, for serving
Instructions
- In a large pot, sauté the onion until translucent, but not caramelized.
- Add the carrots and potatoes, cooking for another 5 minutes.
- Add the chicken and cook until browned.
- Stir in the coconut milk, Thai red curry paste, and peanut butter.
- Bring to a simmer and let cook for 15-20 minutes until the chicken is cooked through and vegetables are tender.
- Stir in soy sauce and lime juice, then serve hot over steaming rice.
Notes
For a vegetarian version, substitute chicken with chickpeas or tofu. Store leftovers in the fridge for up to 3 days.
