Description

A comforting and hearty dish combining ground beef, beans, and cheese under a fluffy cornbread topping, perfect for busy weeknights or family gatherings.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup cornbread mix
  • 1 egg
  • 1 cup milk
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium heat. Add chopped onion and bell pepper; cook until softened.
  3. Stir in black beans, corn, taco seasoning, salt, and pepper; mix well.
  4. In a separate bowl, combine cornbread mix, egg, and milk. Mix until smooth.
  5. Spread the beef mixture in a greased casserole dish. Pour the cornbread batter on top.
  6. Sprinkle cheddar cheese over the cornbread batter.
  7. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  8. Let cool for a few minutes before serving.

Notes

You can prepare the casserole a day ahead and refrigerate before baking.
