Ingredients
- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup cornbread mix
- 1 egg
- 1 cup milk
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, brown the ground beef over medium heat. Add chopped onion and bell pepper; cook until softened.
- Stir in black beans, corn, taco seasoning, salt, and pepper; mix well.
- In a separate bowl, combine cornbread mix, egg, and milk. Mix until smooth.
- Spread the beef mixture in a greased casserole dish. Pour the cornbread batter on top.
- Sprinkle cheddar cheese over the cornbread batter.
- Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Let cool for a few minutes before serving.
Notes
You can prepare the casserole a day ahead and refrigerate before baking.
