Description

A hearty and filling breakfast casserole featuring crispy tater tots, savory sausage, and creamy cheese, perfect for family gatherings or special occasions.

Ingredients

  • Cooking spray
  • 1 medium yellow onion, diced
  • 1 large green bell pepper, diced
  • 1 lb ground breakfast sausage
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fine salt, divided
  • ½ teaspoon black pepper, divided
  • 6 slices cooked bacon, chopped, divided
  • 2 cups shredded Colby-Cheddar or Colby-Jack cheese, divided
  • 6 eggs
  • 1 ¼ cups milk of choice (we used 2%)
  • 1 (28-ounce or two 16-ounce) package frozen tater tots or crispy crowns
  • Optional for serving: Sour cream, sliced green onions, hot sauce, additional bacon

Instructions

  1. Preheat the oven to 400°F. Mist a 9×13-inch baking dish with cooking spray and set aside.
  2. Heat a large skillet or Dutch oven over medium-high heat and mist with cooking spray. Add the onion, bell pepper, and sausage. Cook until the vegetables are crisp-tender and the sausage is cooked through, about 8-10 minutes.
  3. Season the mixture with garlic powder, Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper; stir until well mixed.
  4. Stir 4 slices of the chopped bacon into the mixture, then transfer it to the prepared baking dish.
  5. Add 1 cup of cheese and the frozen tater tots to the mixture in the baking dish. Toss until well incorporated and spread evenly.
  6. In a medium bowl, whisk together the eggs and milk; season with the remaining ½ teaspoon salt and ¼ teaspoon black pepper.
  7. Pour the egg mixture over the ingredients in the baking dish.
  8. Top with the remaining 1 cup cheese and the remaining 2 slices of chopped bacon.
  9. Bake for 25-35 minutes or until the center is set and the top is lightly browned.
  10. For a crispy topping, turn on the oven broiler to High and broil the top for 1-2 minutes until golden brown.
  11. Serve warm, garnished with optional toppings as desired.

Notes

You can prepare the casserole the night before and bake it in the morning, adding a few extra minutes if it’s cold from the fridge. Leftovers can be stored in the refrigerator for up to 4 days.
