Description

A hearty plate of pasta topped with fresh spinach and juicy tomatoes, perfect for quick weeknight dinners.


Ingredients

  • 8 ounces pasta (spaghetti or penne)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 14 ounces canned diced tomatoes
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving


Instructions

  1. Boil water in a large pot and add a pinch of salt. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1-2 minutes.
  3. Add diced tomatoes and Italian seasoning to the skillet. Simmer for about 5 minutes.
  4. Fold in fresh spinach and cook until wilted.
  5. Toss the cooked pasta into the skillet and mix well with the sauce. Season with salt and pepper.
  6. Serve hot, topped with grated Parmesan cheese.

Notes

Use fresh spinach for best flavor. Optional: add crushed red pepper flakes for heat or mix in cooked chicken/shrimp for protein.
