A hearty plate of pasta topped with fresh spinach and juicy tomatoes, perfect for quick weeknight dinners.
Ingredients
- 8 ounces pasta (spaghetti or penne)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 14 ounces canned diced tomatoes
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions
- Boil water in a large pot and add a pinch of salt. Cook the pasta according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1-2 minutes.
- Add diced tomatoes and Italian seasoning to the skillet. Simmer for about 5 minutes.
- Fold in fresh spinach and cook until wilted.
- Toss the cooked pasta into the skillet and mix well with the sauce. Season with salt and pepper.
- Serve hot, topped with grated Parmesan cheese.
Notes
Use fresh spinach for best flavor. Optional: add crushed red pepper flakes for heat or mix in cooked chicken/shrimp for protein.
