Ingredients
- 1 medium eggplant
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

Instructions
- Preheat your air fryer to 375°F (190°C).
- Cut the eggplant into slices or cubes.
- Toss the eggplant with olive oil, garlic powder, onion powder, salt, and pepper in a mixing bowl.
- Arrange the seasoned eggplant in a single layer in the air fryer basket.
- Air fry for 12-15 minutes, shaking the basket halfway through, until golden brown.
- Optional: Sprinkle with Parmesan cheese before serving.
Notes
For maximum crispiness, ensure not to overcrowd the air fryer. You can store leftovers in the refrigerator for 3-4 days or freeze for up to 2 months. Reheat in the air fryer for 5 minutes at 375°F.
