Description

A delightful twist on traditional tacos, these taco stuffed peppers are packed with flavor, vegetables, and wholesome ingredients, making them the perfect weeknight meal.


Ingredients

  • 4 large bell peppers
  • 1 pound ground beef (or turkey/chicken)
  • 1 cup cooked brown rice
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes.
  3. Cook the ground beef in a skillet over medium heat until browned. Drain any excess fat.
  4. Add cooked brown rice, salsa, chili powder, cumin, salt, and pepper to the skillet and mix until combined.
  5. Stuff each bell pepper with the meat and rice mixture.
  6. Arrange the stuffed peppers upright in a baking dish.
  7. Sprinkle cheese on top of the peppers, if using.
  8. Cover with foil and bake for 25-30 minutes, then remove foil and bake for an additional 10 minutes.
  9. Garnish with fresh cilantro before serving.

Notes

For a vegetarian option, substitute ground beef with black beans or quinoa. You can customize toppings according to your preference.
