A delightful twist on traditional tacos, these taco stuffed peppers are packed with flavor, vegetables, and wholesome ingredients, making them the perfect weeknight meal.
Ingredients
- 4 large bell peppers
- 1 pound ground beef (or turkey/chicken)
- 1 cup cooked brown rice
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cut off the tops of the bell peppers and remove the seeds and membranes.
- Cook the ground beef in a skillet over medium heat until browned. Drain any excess fat.
- Add cooked brown rice, salsa, chili powder, cumin, salt, and pepper to the skillet and mix until combined.
- Stuff each bell pepper with the meat and rice mixture.
- Arrange the stuffed peppers upright in a baking dish.
- Sprinkle cheese on top of the peppers, if using.
- Cover with foil and bake for 25-30 minutes, then remove foil and bake for an additional 10 minutes.
- Garnish with fresh cilantro before serving.
Notes
For a vegetarian option, substitute ground beef with black beans or quinoa. You can customize toppings according to your preference.
