Ingredients

  • 2 cups cooked rice
  • 1 lb ground beef or chicken
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • Sour cream for topping
  • Salsa for topping
  • Chopped lettuce (optional)
  • Chopped avocado (optional)


Instructions

  1. In a skillet, brown the ground beef or chicken over medium heat. Drain excess fat.
  2. Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Cook for about 5 minutes until heated through.
  3. In a bowl, layer rice, meat mixture, and top with shredded cheese, sour cream, and salsa.
  4. Add lettuce and avocado if desired.

Notes
