Ingredients
- 2 cups cooked rice
- 1 lb ground beef or chicken
- 1 can black beans, rinsed and drained
- 1 cup corn
- 1 cup diced tomatoes
- 1 packet taco seasoning
- 1 cup shredded cheese
- Sour cream for topping
- Salsa for topping
- Chopped lettuce (optional)
- Chopped avocado (optional)
Instructions
- In a skillet, brown the ground beef or chicken over medium heat. Drain excess fat.
- Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Cook for about 5 minutes until heated through.
- In a bowl, layer rice, meat mixture, and top with shredded cheese, sour cream, and salsa.
- Add lettuce and avocado if desired.
- Serve immediately and enjoy your Taco Rice Bowl!
Notes
For a spicier kick, add diced jalapeños or hot sauce while cooking. You can prepare the meat in advance for quicker assembly.
