Description
A hearty and satisfying taco casserole that combines seasoned beef, creamy cheese, and soft tortillas, perfect for a quick family dinner.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 packet taco seasoning
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (4 ounce) can chopped green chilies
- 1 cup sour cream
- 8 ounces cream cheese, softened
- 12 flour tortillas (6-inch size)
- 2 cups shredded cheddar cheese
- Optional toppings: shredded lettuce, diced tomatoes, salsa, guacamole, extra sour cream
Instructions
- In a large skillet over medium-high heat, brown the ground beef and drain excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5-7 minutes.
- Stir in the taco seasoning and tomato sauce, combining well.
- Reduce heat to low and let simmer for 5-10 minutes.
- Add the black beans, corn, and green chilies, mixing well.
- Simmer for another 2-3 minutes, then set aside.
- In a medium bowl, combine softened cream cheese and sour cream, mixing until smooth.
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Layer tortillas on the bottom, then spread half of the meat mixture over them.
- Spread half of the cream cheese mixture over the meat.
- Sprinkle half of the cheddar cheese on top.
- Repeat the layering process with the remaining ingredients.
- Cover with aluminum foil and bake for 20 minutes.
- Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
- Let it rest for 10 minutes before cutting into squares to serve.
- Add desired toppings and serve hot.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 2 months.
