Description

A hearty and satisfying taco casserole that combines seasoned beef, creamy cheese, and soft tortillas, perfect for a quick family dinner.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet taco seasoning
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (4 ounce) can chopped green chilies
  • 1 cup sour cream
  • 8 ounces cream cheese, softened
  • 12 flour tortillas (6-inch size)
  • 2 cups shredded cheddar cheese
  • Optional toppings: shredded lettuce, diced tomatoes, salsa, guacamole, extra sour cream


Instructions

  1. In a large skillet over medium-high heat, brown the ground beef and drain excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5-7 minutes.
  3. Stir in the taco seasoning and tomato sauce, combining well.
  4. Reduce heat to low and let simmer for 5-10 minutes.
  5. Add the black beans, corn, and green chilies, mixing well.
  6. Simmer for another 2-3 minutes, then set aside.
  7. In a medium bowl, combine softened cream cheese and sour cream, mixing until smooth.
  8. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  9. Layer tortillas on the bottom, then spread half of the meat mixture over them.
  10. Spread half of the cream cheese mixture over the meat.
  11. Sprinkle half of the cheddar cheese on top.
  12. Repeat the layering process with the remaining ingredients.
  13. Cover with aluminum foil and bake for 20 minutes.
  14. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  15. Let it rest for 10 minutes before cutting into squares to serve.
  16. Add desired toppings and serve hot.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for up to 2 months.
