Description

A hearty and comforting dish that combines seasoned beef, creamy cheese, and tortillas into a delicious baked casserole, perfect for weeknight dinners.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet taco seasoning
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (4 ounce) can chopped green chilies
  • 1 cup sour cream
  • 8 ounces cream cheese, softened
  • 12 flour tortillas (6-inch size)
  • 2 cups shredded cheddar cheese
  • Optional toppings: shredded lettuce, diced tomatoes, salsa, guacamole, extra sour cream


Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks. Drain excess grease.
  2. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Stir in taco seasoning and tomato sauce, mixing well.
  4. Reduce heat and let the mixture simmer for 5-10 minutes.
  5. Add black beans, corn, and green chilies. Stir until well combined.
  6. Remove from heat and set aside.
  7. In a medium bowl, combine softened cream cheese and sour cream until smooth.
  8. Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  9. Layer the bottom with tortillas, overlapping as necessary.
  10. Spread half of the meat mixture over the tortillas.
  11. Spread half of the cream cheese mixture on top of the meat.
  12. Sprinkle with half of the cheddar cheese.
  13. Repeat the layers with remaining ingredients.
  14. Cover with aluminum foil and bake for 20 minutes.
  15. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  16. Allow to rest for 10 minutes before cutting into squares and serving.
  17. Serve with optional toppings.

Notes

This dish is adaptable for dietary preferences; swap ground beef for turkey or chicken and use corn tortillas for a gluten-free option.
