A hearty and comforting dish that combines seasoned beef, creamy cheese, and tortillas into a delicious baked casserole, perfect for weeknight dinners.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 packet taco seasoning
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (4 ounce) can chopped green chilies
- 1 cup sour cream
- 8 ounces cream cheese, softened
- 12 flour tortillas (6-inch size)
- 2 cups shredded cheddar cheese
- Optional toppings: shredded lettuce, diced tomatoes, salsa, guacamole, extra sour cream
Instructions
- Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks. Drain excess grease.
- Add chopped onion and cook until softened, about 5-7 minutes.
- Stir in taco seasoning and tomato sauce, mixing well.
- Reduce heat and let the mixture simmer for 5-10 minutes.
- Add black beans, corn, and green chilies. Stir until well combined.
- Remove from heat and set aside.
- In a medium bowl, combine softened cream cheese and sour cream until smooth.
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
- Layer the bottom with tortillas, overlapping as necessary.
- Spread half of the meat mixture over the tortillas.
- Spread half of the cream cheese mixture on top of the meat.
- Sprinkle with half of the cheddar cheese.
- Repeat the layers with remaining ingredients.
- Cover with aluminum foil and bake for 20 minutes.
- Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
- Allow to rest for 10 minutes before cutting into squares and serving.
- Serve with optional toppings.
Notes
This dish is adaptable for dietary preferences; swap ground beef for turkey or chicken and use corn tortillas for a gluten-free option.
