Description
A nutritious dish featuring roasted sweet potatoes and sautéed spinach, perfect as a side or light main course.
Ingredients
- 2 medium sweet potatoes
 - 4 cups fresh spinach
 - 2 tablespoons olive oil
 - 2 cloves garlic, minced
 - Salt, to taste
 - Pepper, to taste
 
Instructions
- Preheat the oven to 400°F (200°C).
 - Peel and cube the sweet potatoes. Toss them with olive oil, salt, and pepper in a bowl.
 - Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes until tender.
 - While the sweet potatoes are roasting, heat a bit of olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
 - Add the spinach to the skillet and cook until wilted.
 - Once the sweet potatoes are roasted, combine them with the sautéed spinach. Season to taste and serve.
 
Notes
For extra flavor, consider adding a squeeze of lemon or some feta cheese on top. Store leftovers in an airtight container for up to 3 days.
