Description

A nutritious dish featuring roasted sweet potatoes and sautéed spinach, perfect as a side or light main course.


Ingredients

  • 2 medium sweet potatoes
  • 4 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. Toss them with olive oil, salt, and pepper in a bowl.
  3. Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes until tender.
  4. While the sweet potatoes are roasting, heat a bit of olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
  5. Add the spinach to the skillet and cook until wilted.
  6. Once the sweet potatoes are roasted, combine them with the sautéed spinach. Season to taste and serve.

Notes

For extra flavor, consider adding a squeeze of lemon or some feta cheese on top. Store leftovers in an airtight container for up to 3 days.
