Description

A cozy and nutritious soup featuring sweet potatoes and kale, perfect for comfort on a chilly day.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 4 cups kale, chopped
  • 1 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/4 tsp red pepper flakes


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until translucent.
  3. Add garlic and cook for 1 minute.
  4. Throw in the sweet potatoes, broth, salt, pepper, cumin, and red pepper flakes. Stir to combine.
  5. Bring to a boil, then reduce heat and let simmer until sweet potatoes are tender, about 15 minutes.
  6. Add kale and cook for an additional 5 minutes.
  7. Blend for a smoother texture if desired, or leave it chunky.

Notes

Feel free to substitute sweet potatoes with regular potatoes or butternut squash, and kale with spinach or Swiss chard.
