A cozy and nutritious soup featuring sweet potatoes and kale, perfect for comfort on a chilly day.
Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 4 cups kale, chopped
- 1 tsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/4 tsp red pepper flakes
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion until translucent.
- Add garlic and cook for 1 minute.
- Throw in the sweet potatoes, broth, salt, pepper, cumin, and red pepper flakes. Stir to combine.
- Bring to a boil, then reduce heat and let simmer until sweet potatoes are tender, about 15 minutes.
- Add kale and cook for an additional 5 minutes.
- Blend for a smoother texture if desired, or leave it chunky.
Notes
Feel free to substitute sweet potatoes with regular potatoes or butternut squash, and kale with spinach or Swiss chard.
