A delightful twist on the classic Italian dish, these sweet potato gnocchi are easy to make and vibrant in color.
Ingredients
- 1 pound sweet potatoes
- 1 cup all-purpose flour (add more if needed)
- ½ teaspoon salt
Instructions
- Prick sweet potatoes with a fork and microwave for 7 to 10 minutes until tender.
- Cut sweet potatoes in half, scoop out the flesh, and mash it in a bowl.
- Add flour and salt to the mashed sweet potatoes and mix with a spoon, then use your hands to combine.
- Transfer the mixture to a floured work surface and knead briefly until you get a compact, soft dough.
- Cut the dough into 4 pieces, roll them into ropes, and cut them into small pillow-shaped gnocchi.
- Cook the gnocchi in boiling salted water for 1 to 2 minutes until they float.
- Add to your favorite sauce and serve hot.
Notes
Serve with marinara sauce, parmesan, or nuts of choice. Store leftovers in an airtight container for 3 to 4 days, or freeze uncooked gnocchi.
