  • 2 medium sweet potatoes, peeled and cubed
  • 1 can coconut milk (400ml)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add garlic and ginger, cooking for 1 minute.
  4. Add sweet potatoes and curry powder, stirring to coat.
  5. Pour in coconut milk and bring to a boil.
  6. Reduce heat and simmer for 20 minutes or until sweet potatoes are tender.
