Description

Rich and fudgy brownies made with sweet potatoes for a healthier dessert option.


Ingredients

  • ¾ cup (180 g) mashed sweet potato (pre-cooked and cooled)
  • ⅓ cup (80 g) almond butter (creamy, or preferred nut butter)
  • 4 tbsp (60 g) maple syrup (or honey)
  • ¼ cup (30 g) cocoa powder
  • 1 tsp vanilla extract
  • ⅙ tsp salt
  • Chocolate chips (optional, for added sweetness)


Instructions

  1. If you haven’t already, cook your sweet potatoes. Mash them with a fork or a potato masher and let them cool completely.
  2. Preheat your oven to 350°F (180°C). Line a 7×7 inch (15 cm x 15 cm) brownie pan with parchment paper.
  3. In a bowl, combine the cooled mashed sweet potato, almond butter, maple syrup, and cocoa powder. If you want to add chocolate chips or other mix-ins, do it now. Using a whisk or a fork, mix well until you get a smooth batter.
  4. Transfer the batter to the prepared brownie pan. Spread it evenly with a spatula.
  5. Bake in the hot oven for 25 to 30 minutes, or until the center is no longer raw. Let the brownies cool completely at room temperature before slicing.

Notes

These brownies are great on their own, but can be served with vanilla ice cream or a dollop of whipped cream.
