A delicious and healthy Sweet Potato & Black Bean Bowl that’s easy to make and packed with nutrients.
Ingredients
- 2 medium sweet potatoes, cubed
- 1 can black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed sweet potatoes with olive oil, cumin, paprika, and salt.
- Spread the sweet potatoes on a baking sheet.
- Bake for 25-30 minutes or until tender.
- In a bowl, combine the baked sweet potatoes and black beans.
- Garnish with fresh cilantro before serving.
Notes
You can substitute sweet potatoes with regular potatoes or quinoa, and black beans with chickpeas or kidney beans.
