Description

A delicious and healthy Sweet Potato & Black Bean Bowl that’s easy to make and packed with nutrients.


Ingredients

  • 2 medium sweet potatoes, cubed
  • 1 can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Fresh cilantro for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, cumin, paprika, and salt.
  3. Spread the sweet potatoes on a baking sheet.
  4. Bake for 25-30 minutes or until tender.
  5. In a bowl, combine the baked sweet potatoes and black beans.
  6. Garnish with fresh cilantro before serving.

Notes

You can substitute sweet potatoes with regular potatoes or quinoa, and black beans with chickpeas or kidney beans.
