Description

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed

  • 1 red bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add sweet potatoes and bell pepper, cook until tender.
  4. Stir in black beans, cumin, chili powder, salt, and pepper.
  5. Cook for an additional 5 minutes, stirring occasionally.
