Ingredients
- 2 medium sweet potatoes, diced into bite-sized chunks
- 4 cups arugula
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced sweet potatoes with olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender and lightly caramelized.
- In a large bowl, combine the arugula, feta cheese, and walnuts.
- Add the roasted sweet potatoes to the salad bowl.
