Description
Oven-baked chicken cubes and colorful bell peppers tossed in a sweet, garlicky chili sauce with a hint of honey. Perfect over rice, salad, or in wraps.
Ingredients
For the Chicken:
- ¾ to 1 lb chicken breasts, cubed
- 1 tbsp cornstarch
- ¼ tsp black pepper
- ¼ tsp salt
- ½ tsp red pepper flakes (optional, more or less to taste)
- 1 small red bell pepper, sliced
- 1 small orange bell pepper, sliced
- 1 jalapeño, sliced (optional)
- 1 tbsp olive oil
Sweet Chili Sauce:
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 inch ginger, minced
- ¾ cup sweet chili sauce
- 1–2 tbsp honey
Garnish:
- 1 lime, sliced
- 3 tbsp green onions, chopped
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Prep Chicken: Cube the chicken into 1-inch pieces. Toss in a bowl with cornstarch, salt, pepper, and red pepper flakes until evenly coated.
- Prepare the Pan: Lightly oil a baking sheet. Spread the chicken out so pieces don’t overlap. Add bell peppers and jalapeños around the chicken.
- Bake: Place in oven for 20 minutes, flipping halfway through. Ensure internal temp reaches 165°F.
- Make the Sauce: In a saucepan over medium heat, melt butter. Add minced garlic and ginger; sauté for 1 minute. Stir in sweet chili sauce and honey; simmer for another minute. Remove from heat.
- Combine: Once chicken is done, pour sauce over chicken and veggies. Toss to coat. Optionally return to oven for 5 more minutes to caramelize.
- Serve: Serve over jasmine rice, cauliflower rice, salad, or in wraps/lettuce cups. Garnish with green onions and lime wedges.
Notes
For more heat, add sriracha or extra red pepper flakes. Can be meal-prepped and stored up to 4 days.
