Deliciously rich and fudgy brownies made with wholesome sweet potatoes, perfect for vegans and those seeking gluten-free treats.


Ingredients

  • 1 and 1/2 cups mashed sweet potato
  • 1/2 cup runny peanut butter
  • 1/2 cup cocoa powder
  • 2 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1/3 cup dairy-free milk
  • 2/3 cup gluten-free oat flour
  • 1/3-1/2 cup dairy-free chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the brownie ingredients in a food processor until a thick and very smooth batter forms.
  3. Fold in chocolate chips if desired.
  4. Bake at 350°F (175°C) for 23 minutes.
  5. Cool down for an hour on the counter, then place in the fridge for 30 minutes to an hour.
  6. Frost the brownies if desired and then cut into slices.
  7. Store in the fridge in an airtight container and enjoy!

Notes

Make sure to mash the sweet potatoes finely for a smoother texture. Adjust chocolate chip quantity for your taste.
