Ingredients
- 1 and 1/2 cups mashed sweet potato
- 1/2 cup runny peanut butter
- 1/2 cup cocoa powder
- 2 tsp vanilla extract
- 1/2 cup maple syrup
- 1/3 cup dairy-free milk
- 2/3 cup gluten-free oat flour
- 1/3-1/2 cup dairy-free chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the brownie ingredients in a food processor until a thick and very smooth batter forms.
- Fold in chocolate chips if desired.
- Bake at 350°F (175°C) for 23 minutes.
- Cool down for an hour on the counter, then place in the fridge for 30 minutes to an hour.
- Frost the brownies if desired and then cut into slices.
- Store in the fridge in an airtight container and enjoy!
Notes
Make sure to mash the sweet potatoes finely for a smoother texture. Adjust chocolate chip quantity for your taste.
