Description

These super crispy air fried zucchini keto chips are a low-carb snack that satisfies your crunchy cravings while sneaking in veggies.


Ingredients

  • 2 medium-sized zucchinis
  • 1 cup pork rind breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • Oil spray for frying


Instructions

  1. Slice the zucchini into thin rounds, about 1/8 inch thick.
  2. In a bowl, combine pork rind breadcrumbs, grated parmesan, salt, pepper, and garlic powder.
  3. Dip each zucchini slice in the breadcrumb mixture, ensuring it’s well coated.
  4. Preheat the air fryer to 375°F (190°C).
  5. Arrange the coated zucchini in a single layer in the air fryer basket.
  6. Lightly spray with oil.
  7. Cook for 10-12 minutes, or until golden and crispy.
  8. For pan-fried method, heat oil in a skillet and fry until crispy.
  9. Serve hot as a snack or appetizer.

Notes

Store leftovers in an airtight container in the refrigerator for 3–4 days or freeze for up to 2 months. If reheating, use the air fryer for best results.
