These super crispy air fried zucchini keto chips are a low-carb snack that satisfies your crunchy cravings while sneaking in veggies.
Ingredients
- 2 medium-sized zucchinis
- 1 cup pork rind breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- Oil spray for frying
Instructions
- Slice the zucchini into thin rounds, about 1/8 inch thick.
- In a bowl, combine pork rind breadcrumbs, grated parmesan, salt, pepper, and garlic powder.
- Dip each zucchini slice in the breadcrumb mixture, ensuring it’s well coated.
- Preheat the air fryer to 375°F (190°C).
- Arrange the coated zucchini in a single layer in the air fryer basket.
- Lightly spray with oil.
- Cook for 10-12 minutes, or until golden and crispy.
- For pan-fried method, heat oil in a skillet and fry until crispy.
- Serve hot as a snack or appetizer.
Notes
Store leftovers in an airtight container in the refrigerator for 3–4 days or freeze for up to 2 months. If reheating, use the air fryer for best results.
