- 4 Persian cucumbers, sliced on a bias
- 6 cups watermelon, cubed
- ½ red onion, thinly sliced
- 1 green onion, chopped
- 2 tablespoons parsley or mint, chopped
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- ¼ teaspoon sea salt (plus flakey salt for garnish, if desired)
Instructions
- Prepare the ingredients: Cube the watermelon and chill in advance. Slice cucumbers on a diagonal. Thinly slice red onion and chop green onion and herbs.
- Combine in a bowl: Toss watermelon, cucumbers, onions, and herbs in a large mixing bowl.
- Dress the salad: Drizzle with olive oil and balsamic vinegar. Sprinkle with sea salt and toss gently to combine.
- Chill and serve: Refrigerate for 30–60 minutes before serving. Optional: Top with vegan feta, pistachios, or serve over arugula.
