A light and fresh sugar cookie fruit pizza topped with a smooth cream cheese frosting and a vibrant mix of seasonal fruits. A fun and easy dessert for any occasion.

Ingredients

Scale
  • For the Sugar Cookie Crust:
  • 1½ cups (188g) all-purpose flour (spooned & leveled)
  • 1½ tsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • For the Cream Cheese Frosting:
  • 8 oz (226g) full-fat brick cream cheese, softened
  • 3 tbsp (43g) unsalted butter, softened
  • 1¼ cups (150g) confectioners’ sugar
  • 1 tsp pure vanilla extract
  • Toppings:
  • About 3 cups (400g) assorted fresh fruit (e.g. strawberries, blueberries, kiwi, grapes, mango, peaches)

Instructions

  1. Preheat the oven: Preheat to 350°F (177°C). Grease a 12-inch pizza pan or line a baking sheet.
  2. Make the crust: In a bowl, whisk together the flour, cornstarch, baking powder, and salt. In another bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Gradually combine the dry ingredients into the wet mixture until a dough forms. Chill the dough for 20 minutes.
  3. Bake the crust: Press dough into a 9–10 inch circle on the prepared pan. Bake for 17–19 minutes, until edges are lightly golden. Cool completely.
  4. Make the frosting: In a large bowl, beat cream cheese and butter until smooth. Add confectioners’ sugar and vanilla extract and beat until creamy.
  5. Assemble the pizza: Spread the frosting evenly over the cooled crust. Top with assorted fresh fruit, arranged in a decorative pattern.
  6. Serve: Slice and enjoy! Store any leftovers in the refrigerator for up to 3 days.

Notes

  • Use brick-style cream cheese for the best frosting consistency.
  • Let the cookie base cool completely before frosting to prevent melting.
  • For extra shine, lightly brush the fruit with a warm apricot glaze (optional).
