Ingredients
- 4 medium zucchinis
- 1 cup cooked quinoa
- 1 cup diced tomatoes
- 1/2 cup chopped onions
- 1/2 cup shredded cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice zucchinis in half lengthwise and scoop out the insides.
- Sauté onions and garlic until translucent.
- Mix in diced tomatoes, cooked quinoa, oregano, salt, and pepper.
- Stuff the zucchini halves with the mixture.
- Top with shredded cheese.
- Bake for 25-30 minutes until zucchinis are tender.
Notes
