Description

A simple and healthy recipe for zesty stuffed zucchini boats that delivers gourmet taste without the hassle.


Ingredients

  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1/2 cup chopped onions
  • 1/2 cup shredded cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis in half lengthwise and scoop out the insides.
  3. Sauté onions and garlic until translucent.
  4. Mix in diced tomatoes, cooked quinoa, oregano, salt, and pepper.
  5. Stuff the zucchini halves with the mixture.
  6. Top with shredded cheese.
  7. Bake for 25-30 minutes until zucchinis are tender.

Notes

Feel free to substitute quinoa with brown rice or couscous. You can also use different types of cheese and herbs.
