Ingredients
- 4 chicken breasts
- 1 cup fresh spinach, chopped
- 8 oz cream cheese, softened
- 1/2 cup dried cranberries, chopped
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the cream cheese, spinach, dried cranberries, garlic powder, salt, and pepper until well combined.
- Carefully slice a pocket into each chicken breast.
- Stuff each chicken breast with the cream cheese mixture.
- Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 2–3 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 25–30 minutes, or until cooked through.
