Ingredients

  • 1 large butternut squash
  • 2 cups fresh spinach, chopped
  • 4 slices of bacon, cooked and crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully halve the butternut squash lengthwise and scoop out the seeds. Brush the insides with olive oil, sprinkle with salt and pepper, and place cut side down on a baking sheet. Bake for 30-35 minutes until the squash is tender.
  3. In a skillet, heat a bit of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened.
  4. Once the onion and garlic are ready, add the chopped spinach to the skillet and cook until it wilts.
  5. In a bowl, mix the sautéed spinach mixture with the crumbled bacon and shredded cheese.
  6. Take the squash out of the oven and carefully flip the halves over. Fill each half with the spinach, bacon, and cheese mixture.
  7. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  8. Serve warm as a side dish.
