Ingredients
- 1 large butternut squash
- 2 cups fresh spinach, chopped
- 4 slices of bacon, cooked and crumbled
- 1 cup shredded cheese (cheddar or your choice)
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Carefully halve the butternut squash lengthwise and scoop out the seeds. Brush the insides with olive oil, sprinkle with salt and pepper, and place cut side down on a baking sheet. Bake for 30-35 minutes until the squash is tender.
- In a skillet, heat a bit of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened.
- Once the onion and garlic are ready, add the chopped spinach to the skillet and cook until it wilts.
- In a bowl, mix the sautéed spinach mixture with the crumbled bacon and shredded cheese.
- Take the squash out of the oven and carefully flip the halves over. Fill each half with the spinach, bacon, and cheese mixture.
- Return the stuffed squash to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Serve warm as a side dish.
