Description

A comforting and easy one-pot white chicken chili that’s packed with protein and flavor.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • Salt and pepper to taste
  • 1 cup sour cream
  • Fresh cilantro for garnish


Instructions

  1. In a large pot, sauté the onion and garlic over medium heat until soft.
  2. Add the chicken breasts to the pot and cook until browned.
  3. Stir in the green chilies, white beans, corn, cumin, chili powder, salt, and pepper.
  4. Pour in the chicken broth and bring everything to a boil.
  5. Once boiling, reduce the heat and let it simmer for about 20 minutes.
  6. After 20 minutes, remove the chicken, shred it, and return it to the pot.
  7. Stir in the sour cream and heat through.
  8. Garnish with fresh cilantro before serving.

Notes

Feel free to substitute chicken with turkey or plant-based protein. Adjust spices to your taste.
