Description
A comforting and easy one-pot white chicken chili that’s packed with protein and flavor.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- 1 cup corn, frozen or canned
- Salt and pepper to taste
- 1 cup sour cream
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic over medium heat until soft.
- Add the chicken breasts to the pot and cook until browned.
- Stir in the green chilies, white beans, corn, cumin, chili powder, salt, and pepper.
- Pour in the chicken broth and bring everything to a boil.
- Once boiling, reduce the heat and let it simmer for about 20 minutes.
- After 20 minutes, remove the chicken, shred it, and return it to the pot.
- Stir in the sour cream and heat through.
- Garnish with fresh cilantro before serving.
Notes
Feel free to substitute chicken with turkey or plant-based protein. Adjust spices to your taste.
