Description

A warm and comforting British dessert made from chewy date pudding and rich toffee sauce, perfect for chilly days.


Ingredients

  • 200g chopped dates
  • 250ml boiling water
  • 1 teaspoon baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 150g all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 200ml heavy cream
  • 50g unsalted butter (for sauce)
  • 100g brown sugar (for sauce)


Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine dates and boiling water; add baking soda and let sit.
  3. Cream together the butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Combine the flour, vanilla extract, and salt with the creamed mixture.
  6. Fold in the date mixture.
  7. Pour the batter into a greased baking dish.
  8. Bake for 30-35 minutes until a skewer comes out clean.
  9. Prepare the toffee sauce by combining cream, brown sugar, and unsalted butter in a saucepan and stirring until thickened.
  10. Serve the pudding warm with toffee sauce drizzled over it.

Notes

For extra moisture, soak dates longer in boiling water. Serve with ice cream or whipped cream for added indulgence.
