Description
A warm and comforting British dessert made from chewy date pudding and rich toffee sauce, perfect for chilly days.
Ingredients
- 200g chopped dates
- 250ml boiling water
- 1 teaspoon baking soda
- 100g unsalted butter, softened
- 150g brown sugar
- 2 large eggs
- 150g all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 200ml heavy cream
- 50g unsalted butter (for sauce)
- 100g brown sugar (for sauce)
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, combine dates and boiling water; add baking soda and let sit.
- Cream together the butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Combine the flour, vanilla extract, and salt with the creamed mixture.
- Fold in the date mixture.
- Pour the batter into a greased baking dish.
- Bake for 30-35 minutes until a skewer comes out clean.
- Prepare the toffee sauce by combining cream, brown sugar, and unsalted butter in a saucepan and stirring until thickened.
- Serve the pudding warm with toffee sauce drizzled over it.
Notes
For extra moisture, soak dates longer in boiling water. Serve with ice cream or whipped cream for added indulgence.
