Description

A creamy and delicious Steak Gorgonzola Alfredo served over spaghetti squash, perfect for a quick yet gourmet dinner.


Ingredients

  • 1 medium spaghetti squash
  • 1 lb steak, sliced
  • 1 cup heavy cream
  • 1 cup Gorgonzola cheese, crumbled
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half and remove the seeds.
  3. Drizzle olive oil on the squash and season with salt and pepper.
  4. Place squash cut-side down on a baking sheet and roast for 30-40 minutes.
  5. In a skillet, heat olive oil over medium-high heat.
  6. Cook the steak slices until browned, about 3-5 minutes.
  7. Add minced garlic to the skillet and cook for another minute.
  8. Pour in the heavy cream and stir in the Gorgonzola cheese until it melts.
  9. Once the squash is done, scrape the flesh with a fork to create spaghetti strands.
  10. Serve the steak and sauce over the spaghetti squash.
