  • 1 cup uncooked rice
  • 1 lb steak (sirloin or choice)
  • 2 cups beef broth
  • 1 cup queso cheese (or Velveeta)
  • 1 chopped onion
  • 1 chopped bell pepper
  • 2 cloves minced garlic
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • Olive oil for cooking


Instructions

  1. Gather all your ingredients.
  2. Heat a skillet over medium-high heat, add olive oil, season steak with salt and pepper, and sear for 4-5 minutes on each side.
  3. Remove steak from skillet and let it rest.
  4. Sauté chopped onion and bell pepper in the same skillet for about 5 minutes.
  5. Add minced garlic and cumin, cooking for an additional minute.
  6. Stir in the uncooked rice, ensuring it is well-coated with the vegetable mixture.
  7. Add beef broth, bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes.
  8. Once rice is cooked, stir in queso cheese until melted and creamy.
  9. Slice the rested steak against the grain and serve on top of the cheesy rice.
