Ingredients
- 1 cup uncooked rice
- 1 lb steak (sirloin or choice)
- 2 cups beef broth
- 1 cup queso cheese (or Velveeta)
- 1 chopped onion
- 1 bell pepper (chopped)
- 2 cloves minced garlic
- 1 tsp cumin
- Salt, to taste
- Pepper, to taste
- Olive oil, for cooking
Instructions
- Prepare all ingredients before cooking.
- Heat a large skillet over medium-high heat and add olive oil.
- Season steak with salt and pepper, then sear for 4-5 minutes on each side.
- Remove steak from skillet and let it rest.
- Sauté chopped onion and bell pepper in the same skillet until softened, about 5 minutes.
- Add minced garlic and cumin, cooking for another minute.
- Stir in uncooked rice, ensuring it is coated in the vegetable mixture.
- Pour in beef broth, bring to a boil, then cover and simmer for 18-20 minutes.
- Once rice is cooked, stir in queso cheese until melted.
- Slice rested steak thinly against the grain and serve over the cheesy rice.
Notes
Garnish with chopped cilantro or green onions. Serve with a side salad or grilled veggies.
