Description

A hearty and comforting meal combining savory steak, gooey queso, and fluffy rice, perfect for busy weeknight dinners.


Ingredients

  • 1 cup uncooked rice
  • 1 lb steak (sirloin or choice)
  • 2 cups beef broth
  • 1 cup queso cheese (or Velveeta)
  • 1 chopped onion
  • 1 bell pepper (chopped)
  • 2 cloves minced garlic
  • 1 tsp cumin
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for cooking


Instructions

  1. Prepare all ingredients before cooking.
  2. Heat a large skillet over medium-high heat and add olive oil.
  3. Season steak with salt and pepper, then sear for 4-5 minutes on each side.
  4. Remove steak from skillet and let it rest.
  5. Sauté chopped onion and bell pepper in the same skillet until softened, about 5 minutes.
  6. Add minced garlic and cumin, cooking for another minute.
  7. Stir in uncooked rice, ensuring it is coated in the vegetable mixture.
  8. Pour in beef broth, bring to a boil, then cover and simmer for 18-20 minutes.
  9. Once rice is cooked, stir in queso cheese until melted.
  10. Slice rested steak thinly against the grain and serve over the cheesy rice.

Notes

Garnish with chopped cilantro or green onions. Serve with a side salad or grilled veggies.
