Ingredients
- 1 lb skirt steak, flank steak, or sirloin
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 2 cups cooked rice
- 1 avocado, sliced
- 1 cup roasted corn
- 1/4 cup fresh cilantro
- 2 tbsp lime juice
- Salt and pepper to taste
Instructions
- Season the steak with olive oil, minced garlic, salt, and pepper.
- Grill or sear the steak to your desired doneness, then let it rest.
- Prepare the roasted corn by grilling or baking until slightly charred.
- In a blender, combine cilantro, lime juice, salt, and olive oil to create the cilantro cream sauce; blend until smooth.
- Assemble the bowl with a base of cooked rice, then top with sliced steak, avocado, and roasted corn.
- Drizzle the cilantro cream sauce over the top before serving.
