Ingredients

  • 1 lb skirt steak, flank steak, or sirloin
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 cups cooked rice
  • 1 avocado, sliced
  • 1 cup roasted corn
  • 1/4 cup fresh cilantro
  • 2 tbsp lime juice
  • Salt and pepper to taste


Instructions

  1. Season the steak with olive oil, minced garlic, salt, and pepper.
  2. Grill or sear the steak to your desired doneness, then let it rest.
  3. Prepare the roasted corn by grilling or baking until slightly charred.
  4. In a blender, combine cilantro, lime juice, salt, and olive oil to create the cilantro cream sauce; blend until smooth.
  5. Assemble the bowl with a base of cooked rice, then top with sliced steak, avocado, and roasted corn.
  6. Drizzle the cilantro cream sauce over the top before serving.

Notes
