Ingredients
- 8 oz pasta (spaghetti, penne, or any type)
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- Salt to taste
- Pepper to taste
Instructions
- Cook the pasta according to package instructions. Set a timer to ensure it remains al dente.
- In a skillet, heat olive oil over medium heat until it shimmers.
- Add garlic and sauté until fragrant.
- Toss in the mushrooms and cook until browned, stirring occasionally.
- Stir in the spinach and cook until wilted.
- Add the cooked pasta to the skillet and mix well.
- Toss in the Parmesan cheese, salt, and pepper. Stir everything together and serve immediately.
Notes
For extra flavor, feel free to add chicken or shrimp. This dish is also great with whole grain or gluten-free pasta.
