Spinach Mushroom Mini Quiches

Description

Delightful bite-sized mini quiches packed with spinach and mushrooms, perfect for brunch or snacking.


Ingredients

  • 1 pre-made pie crust
  • 1 cup diced mushrooms
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 cup shredded cheese (cheddar or your choice)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat oil over medium heat and sauté the diced mushrooms for 3-5 minutes until softened.
  3. Add chopped spinach to the skillet and cook until wilted, about 2 minutes.
  4. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder.
  5. Fold the sautéed mushrooms and spinach into the egg mixture.
  6. Roll out the pie crust and cut it into circles to fit into a greased muffin tin.
  7. Press the pie crust rounds into the muffin tin.
  8. Carefully pour the egg and vegetable mixture into each crust.
  9. Sprinkle shredded cheese on top of each quiche.
  10. Bake for 20-25 minutes or until set and golden brown.

Notes

These mini quiches can be made in advance and stored in the refrigerator or freezer for convenience.
