Description
A comforting and nourishing lasagna made with fresh spinach, earthy mushrooms, and layers of rich cheeses.
Ingredients
- 9 lasagna noodles
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cups ricotta cheese
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a skillet, sauté the sliced mushrooms over medium heat until they become soft and fragrant.
- Add the fresh spinach to the skillet and cook until it wilts down, about 2 minutes.
- In a large bowl, combine the ricotta cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well.
- Spread a thin layer of marinara sauce in the bottom of a baking dish.
- Layer three noodles over the sauce, followed by half of the ricotta mixture, half of the sautéed mushroom and spinach mixture, and a third of the shredded mozzarella.
- Repeat the layers: three more noodles, remaining ricotta mixture, remaining mushroom and spinach mixture, and another third of mozzarella.
- For the final layer, place the last three noodles on top, cover with remaining marinara sauce, the rest of the mozzarella, and grated Parmesan cheese.
- Bake in the preheated oven for 30 to 35 minutes, until bubbly and golden brown.
- Allow to cool for about 10 minutes before slicing and serving.
Notes
Letting the lasagna sit after baking helps set the layers for easier serving.
