Ingredients
- 1 cup lentils
- 2 cups fresh spinach, chopped
- 1 onion, diced
- 2 tomatoes, chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 2 tablespoons oil (sunflower, coconut, or olive)
- Salt to taste
- 2 cups water
Instructions
- Gather all ingredients for smooth cooking.
- Heat oil in a pot over medium heat.
- Add cumin seeds to the hot oil and let them splutter.
- Cook diced onion until golden brown.
- Add minced garlic and grated ginger, cooking until fragrant.
- Toss in chopped tomatoes and cook till soft.
- Incorporate turmeric, coriander, and red chili powders, stirring well.
- Add lentils and water, bringing to a boil.
- Reduce heat and let the curry simmer until lentils are tender (20-30 minutes).
- Stir in chopped spinach, cooking for an additional 5 minutes. Season with salt before serving hot.
Notes
Store in an airtight container in the fridge for 3-4 days, or freeze for up to 2 months. Garnish with fresh cilantro or lime juice when serving.
