Ingredients

  • 1 cup lentils
  • 2 cups fresh spinach, chopped
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 2 tablespoons oil (sunflower, coconut, or olive)
  • Salt to taste
  • 2 cups water


Instructions

  1. Gather all ingredients for smooth cooking.
  2. Heat oil in a pot over medium heat.
  3. Add cumin seeds to the hot oil and let them splutter.
  4. Cook diced onion until golden brown.
  5. Add minced garlic and grated ginger, cooking until fragrant.
  6. Toss in chopped tomatoes and cook till soft.
  7. Incorporate turmeric, coriander, and red chili powders, stirring well.
  8. Add lentils and water, bringing to a boil.
  9. Reduce heat and let the curry simmer until lentils are tender (20-30 minutes).
  10. Stir in chopped spinach, cooking for an additional 5 minutes. Season with salt before serving hot.

Notes

Store in an airtight container in the fridge for 3-4 days, or freeze for up to 2 months. Garnish with fresh cilantro or lime juice when serving.
