Description
A quick and delicious Spinach & Cheese Quesadilla that takes under 15 minutes to make, packed with goodness and cheesy flavors.
Ingredients
- 2 cups fresh spinach
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 flour tortillas
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the fresh spinach and sauté until wilted.
- In a bowl, mix the sautéed spinach, cheese, garlic powder, salt, and pepper.
- Place a tortilla in the skillet and add the spinach and cheese mixture on top, then place another tortilla on top.
- Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
- Remove from skillet, slice into wedges, and serve warm.
Notes
Serve with salsa or sour cream for added flavor. You can also use kale or other cheeses as substitutes.
