Ingredients
- 1 cup lentils (green or brown)
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 4 cups vegetable broth
- 1 can diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrot, and bell pepper; sauté until soft.
- Add lentils and spices, and stir well.
- Pour in vegetable broth and tomatoes; bring to a boil.
- Reduce heat and simmer for 30 minutes until lentils are tender.
- Season with salt and pepper.
- Serve hot, garnished with cilantro.
