Description

A comforting and flavorful spicy miso carrot soup that’s easy to make and perfect for any season.


Ingredients

  • 4 cups carrots, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons miso paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 tablespoon olive oil
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste
  • Chili flakes (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
  2. Add the grated ginger and cook for another minute.
  3. Stir in the carrots and vegetable broth, bringing it to a simmer.
  4. Cook until the carrots are tender, about 15-20 minutes.
  5. Remove from heat, then stir in the miso paste and coconut milk until well combined.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Season with salt, pepper, and chili flakes to taste.
  8. Serve warm and garnish with cilantro if desired.

Notes

This soup is vegan and can be customized with additional vegetables as desired.
