Description

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can white beans (15 oz)
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 jalapeños, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • Fresh cilantro for garnish


Instructions

  1. Sauté onion and jalapeños until soft, about 5 minutes.
  2. Add garlic and sauté for another minute until fragrant.
  3. Stir in chicken, beans, tomatoes, broth, corn (if using), cumin, and chili powder.
  4. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh cilantro.
