A cozy and spicy chicken chili that’s quick to prepare, perfect for chilly evenings or any time you crave something delicious.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup sour cream
  • Fresh cilantro for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Toss in the chopped onion and minced garlic. Sauté until soft and translucent.
  3. Stir in the shredded chicken, white beans, corn, and diced green chilies.
  4. Pour in the chicken broth and add the Cajun seasoning, cumin, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat and let simmer for about 20 minutes.
  6. Stir in the sour cream before serving.
  7. Garnish with fresh cilantro before serving.

Notes

Adjust the spice level by modifying the amount of Cajun seasoning used. Leftovers can be refrigerated for 3-4 days or frozen for longer shelf life.
