A cozy and spicy chicken chili that’s quick to prepare, perfect for chilly evenings or any time you crave something delicious.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 can diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup sour cream
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Toss in the chopped onion and minced garlic. Sauté until soft and translucent.
- Stir in the shredded chicken, white beans, corn, and diced green chilies.
- Pour in the chicken broth and add the Cajun seasoning, cumin, salt, and pepper. Stir well.
- Bring to a boil, then reduce heat and let simmer for about 20 minutes.
- Stir in the sour cream before serving.
- Garnish with fresh cilantro before serving.
Notes
Adjust the spice level by modifying the amount of Cajun seasoning used. Leftovers can be refrigerated for 3-4 days or frozen for longer shelf life.
