Description

Delightful truffles blending pumpkin spice and chocolate, perfect for fall gatherings.


Ingredients

  • 4 ounces (115g) good quality white chocolate
  • 1/3 cup (80g) pumpkin puree (NOT pumpkin pie filling)
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon pumpkin pie spice or ground cinnamon
  • 1 1/2 cups (195g) graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • Mini chocolate chips (optional, for decorating)


Instructions

  1. Melt the white chocolate in your microwave or over a double boiler until smooth.
  2. Set the melted chocolate aside for 5 to 10 minutes to cool slightly.
  3. In a large bowl, mix together the pumpkin puree, powdered sugar, and pumpkin pie spice until well combined.
  4. Add the melted chocolate to the mixture and stir to combine.
  5. Fold in the graham cracker crumbs until you have a thick, soft dough.
  6. Cover the bowl with plastic wrap and chill the truffle dough in the refrigerator for 1 to 2 hours or until firm enough to scoop and roll.
  7. In a shallow bowl, mix together the granulated sugar and ground cinnamon.
  8. Scoop out tablespoon-sized amounts of the truffle dough and roll them into smooth balls.
  9. Drop the truffles into the bowl of cinnamon sugar and roll to coat.
  10. (Optional) Decorate by pressing indents into the sides to mimic pumpkin ridges and pressing a mini chocolate chip into the top for a stem.
  11. Keep the truffles in the fridge until ready to enjoy.

Notes

For best flavor, use high-quality white chocolate. Adjust spices according to your taste. Chill the dough longer if too sticky.
