Delightful truffles blending pumpkin spice and chocolate, perfect for fall gatherings.
Ingredients
- 4 ounces (115g) good quality white chocolate
- 1/3 cup (80g) pumpkin puree (NOT pumpkin pie filling)
- 1 tablespoon powdered sugar
- 1/2 teaspoon pumpkin pie spice or ground cinnamon
- 1 1/2 cups (195g) graham cracker crumbs
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- Mini chocolate chips (optional, for decorating)
Instructions
- Melt the white chocolate in your microwave or over a double boiler until smooth.
- Set the melted chocolate aside for 5 to 10 minutes to cool slightly.
- In a large bowl, mix together the pumpkin puree, powdered sugar, and pumpkin pie spice until well combined.
- Add the melted chocolate to the mixture and stir to combine.
- Fold in the graham cracker crumbs until you have a thick, soft dough.
- Cover the bowl with plastic wrap and chill the truffle dough in the refrigerator for 1 to 2 hours or until firm enough to scoop and roll.
- In a shallow bowl, mix together the granulated sugar and ground cinnamon.
- Scoop out tablespoon-sized amounts of the truffle dough and roll them into smooth balls.
- Drop the truffles into the bowl of cinnamon sugar and roll to coat.
- (Optional) Decorate by pressing indents into the sides to mimic pumpkin ridges and pressing a mini chocolate chip into the top for a stem.
- Keep the truffles in the fridge until ready to enjoy.
Notes
For best flavor, use high-quality white chocolate. Adjust spices according to your taste. Chill the dough longer if too sticky.
