Ingredients
- 4 cups carrots, chopped
- 1 onion, diced
- 2 tablespoons fresh ginger, grated
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add the onion and sauté until translucent.
- Stir in the ginger, cumin, and coriander. Cook for 1 minute.
- Add chopped carrots and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Blend the soup until smooth.
