Ingredients
Scale
- 2 cups fresh okra, washed and dried
- 1–2 tbsp olive oil or avocado oil
- 1 tsp smoked paprika
- ½ tsp cumin
- ½ tsp garlic powder
- ¼ tsp chili flakes
- Salt to taste
Instructions
- Preheat oven to 425°F (220°C).
- Trim the ends of the okra and slice lengthwise (or leave whole if small).
- Pat the okra completely dry with a towel to reduce slime.
- In a mixing bowl, toss the okra with oil, smoked paprika, cumin, garlic powder, chili flakes, and salt.
- Spread on a baking tray in a single layer without overcrowding.
- Bake for 20–25 minutes, flipping halfway through, until crispy and golden.
- Let cool slightly before serving. Enjoy it as a snack, side dish, or Whole30-friendly meal prep!
Notes
For extra crispiness, make sure the okra is completely dry before roasting. Adjust spices to taste—add turmeric or curry powder for variation.
