Southwest Egg Rolls

Description

Crispy and delicious Southwest egg rolls that are easy to make and perfect for sharing or snacking.


Ingredients

  • 1 cup shredded chicken
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn
  • 1/2 cup diced red bell pepper
  • 1/2 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package egg roll wrappers
  • Oil for frying


Instructions

  1. In a mixing bowl, toss together the shredded chicken, black beans, corn, diced red bell pepper, shredded cheese, cumin, and chili powder. Mix until combined.
  2. Grab an egg roll wrapper and place a spoonful of the chicken mixture in the center.
  3. Fold the sides of the egg roll wrapper over the filling, then roll the bottom up tightly.
  4. Heat enough oil in a pan over medium heat to cover the bottom, about half an inch deep.
  5. Fry the egg rolls in batches until golden brown on all sides, about 3–4 minutes per side.
  6. Drain on paper towels and serve hot with salsa or sour cream.

Notes

You can prep these and store them in the fridge uncooked. Bake at 400°F for 15-20 minutes instead of frying if desired.
