Description

Crispy and flavorful egg rolls filled with black beans, corn, and cheese, perfect for snacks or appetizers.


Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 cup bell peppers, diced
  • 1 cup spinach, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup cheese, shredded
  • 8 egg roll wrappers
  • Oil for frying


Instructions

  1. In a large mixing bowl, toss together the black beans, corn, bell peppers, spinach, cumin, chili powder, and cheese until well combined.
  2. Place a spoonful of the mixture on an egg roll wrapper.
  3. Fold the wrapper over the filling and seal the edges with a little water.
  4. Heat oil in a pan over medium heat.
  5. Fry the egg rolls until golden brown on all sides.
  6. Drain on paper towels and serve hot.

Notes

Ensure to seal the edges properly to avoid spills during frying. Can be made in advance and stored until ready to fry.
