This traditional Southern tomato pie features layers of ripe tomatoes and a savory mayo-cheese mixture with sweet onions and crispy bacon. Baked in a flaky crust until golden and bubbly—perfect for summer dinners or brunch.

- 1 pre-baked pie crust
- 3 large ripe tomatoes, sliced
- ¾ cup mayonnaise
- 1 cup sharp cheddar cheese
- ½ cup Parmesan cheese
- ½ cup chopped sweet onion
- 3 strips crispy bacon, crumbled (optional)
- ¼ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
Instructions
- Preheat your oven to 350°F (175°C).
- Layer half of the tomato slices in the bottom of the pre-baked pie crust.
- In a mixing bowl, combine mayonnaise, cheddar cheese, Parmesan cheese, chopped sweet onion, bacon (if using), salt, pepper, and garlic powder.
- Spread half of this mixture over the tomatoes in the pie crust.
- Add another layer with the remaining tomato slices, then top with the rest of the cheese-mayo mixture.
- Bake for 45–50 minutes, or until the top is golden brown and bubbly.
- Let the pie cool slightly before slicing to allow it to set. Serve warm or at room temperature.
Notes
To reduce excess moisture, lightly salt tomato slices and place them on paper towels for 15–20 minutes before layering. Pairs well with a fresh green salad or iced tea.
