For the Topping:

  • 1 cup all-purpose flour
  • ⅓ cup granulated sugar
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ½ cup cold unsalted butter, cubed
  • ¼ cup milk
  • Cinnamon-sugar mix (for sprinkling on top)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the filling: In a large bowl, combine sliced peaches with sugar, lemon juice, cornstarch, cinnamon (if using), and vanilla. Mix until well coated. Pour into a greased 9×13-inch baking dish.
  3. Make the topping: In a separate bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture forms coarse crumbs. Stir in milk just until combined—do not overmix.
