For the Cookies:
- 1 cup pumpkin puree
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 1 egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
For the Frosting:
- 4 oz cream cheese, softened
- ¼ cup unsalted butter, softened
- 1½ cups powdered sugar
- 1 tsp vanilla extract
- Optional: dash of cinnamon or maple syrup
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together butter and sugar until light and fluffy. Add egg, pumpkin puree, and vanilla. Mix well.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Scoop spoonfuls of dough onto the baking sheet.
- Bake for 10–12 minutes, or until cookies are set. Let cool completely before frosting.
- To Make the Frosting: Beat cream cheese and butter until smooth. Add vanilla extract. Gradually add powdered sugar and beat until fluffy. Optionally, mix in a dash of cinnamon or maple syrup.
- Frost cooled cookies generously and serve.
Notes
For a festive touch, sprinkle cinnamon or chopped pecans over the frosted cookies. Store in the fridge for up to 5 days.
