Instructions

  1. Prep the zucchini: Shred the zucchini and mix with kosher salt. Let sit for 10 minutes, then squeeze out as much moisture as possible using a clean towel or paper towels.
  2. Make the dough base: In a food processor, pulse together the flour, baking powder, and baking soda. Add cold butter cubes and pulse until mixture resembles coarse crumbs.
  3. Add cheese and herbs: Add shredded cheddar, parsley, and chives. Pulse 1–2 times to incorporate.
